Spring Barley Risotto ~

Spring Barley Risotto

Ayurveda Wellness Healing, LLC loves a healthier alternative to the more traditional arborio risotto rice, barley adds iron and fiber to this fresh take on risotto. One cup of the green peas found in this dish offers more protein than a large egg.

Serves 4
2 Tablespoons oiive oil
1 cup pearled barley
2 leeks, white and green parts only, thinly sliced
½ cup white wind or water
2 cups water
Coarse salt and fresh ground pepper
14 ½ ounces vegetable broth
1 bunch of asparagus (about 1 pound) trimmed and cut in 2 inch pieces
1 box frozen peas defrosted (or fresh)
½ cup fresh grated parmesan

In a large saucepan, heat oil over medium heat. Add Barley and leeks and cook until it begins to soften about 5 to 7 minutes. Add ½ cup wine or water and cook for another 5 minutes and water starts to evaporate. Add remaining 2 cups of water and bring to boil and season with salt and pepper. Reduce heat and simmer until liquid absorbs, about 10 minutes

Add broth and continue to cook , stirring occasionally until barley is tender and creamy, about 10 minutes. Add asparagus and cook until tender another 5 minutes. Stir in peas until heated through (if using fresh cook throughly), Add parmesan and mint and season with salt and pepper. Enjoy!

Ayurveda Wellness Healing, LLC loves this great Spring waffle to balance kapha with it’s drier nature yet still moist enough to keep vata balanced.

Pair it with ghee and/or fruit spread, top it with cooked fruit, or use good old pure maple syrup.

Oat Waffles

2 c. oatmeal (thick cut) or 1 c. oatmeal and 1 c. rolled barley
1/4 c. oat brain
2 Tbsp. ground flax seeds or sesame seeds
2 1/4 c. water (more if needed for desired consistency)
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. seal salt
2 Tbsp. oil
1/2 c. nuts

Instructions:
Grind the oats (and barley if using) in the blender.
Add the remaining ingredients and blend batter until light and foamy.

Let it rest in the refrigerator for 30 minutes to overnight.

Beat vigorously before baking – and you may need to add a little more water.

Cook in a preheated waffle pan.
Pour a large spoonful of batter onto the greased iron and quickly spread it out almost to the edges. When the light goes over, flip over and cook another minute or so.

Serve promptly with suggestions above and enjoy!

Ayurveda Wellness Healing, LLC loves the following spring soup recipe, so yummy and it’s good for your digestion too!

Curried Apple and Celery Soup Recipe

Ingredients
(4 servings)
2 Stalks Celery, roughly chopped
2 Green Apples, peeled and roughly chopped
1/2 cup Milk
1/2-cup Vegetable stock, or water
1/2 teaspoon Cumin powder
1/2 teaspoon Cinnamon Powder
Salt and Pepper, to taste

To begin making the Apple Celery Soup, melt the butter in a saucepan. Add in the chopped celery root and the apples.

Sprinkle some salt and sauté until the celery and the apple turn a little soft.

Keep the saucepan partially covered so the steam that gets generated helps them to cook faster.

Stir in the remaining ingredients and add it to the blender. If you don’t have a blender that can’t take in heat, then wait for the mixture to cool before you can blend it.

Blend the apple celery soup mixture in the blender until smooth.

Pour the soup back into the saucepan and check for the salt and pepper levels. Adjust to suit your taste.

When you are ready to serve the soup, give the soup a quick boil

Spring is know as Kapha season through the lens of Ayurveda and we need to help ourselves by eating foods that will help lift the fog, dampness and break up mucus.

Cilantro calms our immune sensitivity to pollen. It is hypoallergenic and cools the liver.

Mint refreshes the mind, disperses dullness and lifts the fog. It breaks up mucus and fluid stagnation in the lungs, throat and sinuses. Mint and cilantro are both diuretics with the potential to drain excess water via the urinary tract. Raw onions have a cleansing effect on the liver and a laxative effect in the GI. Wild onions, a common weed, are a great addition to the spring time menu.

• 2 cups packed fresh cilantro sprigs
• 1 cup packed fresh mint leaves
• 1/2 cup chopped white onion
• 1/3 cup water
• 1 tablespoon fresh lime juice
• 1 teaspoon chopped fresh small green chiles, such as serrano or Thai, including seeds, or to taste
• 1 teaspoon sugar
• 3/4 teaspoon salt, or to taste

The Contraindications

Avoid garshana if you have:

Very sensitive skin

A Skin condition, such as psoriasis or eczema

An open wound (skip area)

Inflamed skin due to sunburn or an allergy an allergy

Ayurvedic dry-brushing, called garshana (pronounced gar-shun-uh), promotes lymphatic cleansing and is a powerful way to support the removal of ama (cellular waste products) from the body. Garshana is traditionally done using raw silk or linen gloves, though many prefer to use a natural bristle body brush. This technique is recommended for people who have signs of ama, which may include fatigue, sluggishness, feeling physical or mental dullness, constipation, and a taxed immune system.

Dry brushing is also an excellent practice for the kapha time of year, the season of spring. During the spring months, snow is melting, water has saturated the earth, and flower pollen is carried on the breeze. This is the time of year when kapha can begin to accumulate in the lymph or the sinuses and create stagnation or respiratory congestion. Dry brushing helps to stimulate kapha in the body and encourage movement and drainage of excess mucus.

It is important to do abhyanga (Ayurvedic self-oil massage) after dry brushing. Organic cold pressed sesame oil is a good place to start. Ayurveda Wellness Healing, LLC carriers a wide variety of self-oil massage oils, including, sesame, Vata, Pitta, Kapha, and detox oil for your convenience.

Guidelines for Garshana—The Traditional Ayurvedic Dry Massage

Skin brushing is best done in the morning before bathing, with dry skin that is free from lotion or oil

Make sure the room where the massage will be done is a comfortable temperature
Stand in the bathtub/shower or on a towel to avoid getting flaky skin on the floor

Using gloves or a brush, massage vigorously to stimulate the skin and lymph

Keep the direction of the stroke always toward the heart

Use circular strokes on the stomach and joints (shoulders, elbows, knees, wrists, hips, and ankles), and long sweeping strokes on the arms and legs (toward the heart)

Massage from the feet upward, continuing to the torso and on to the neck

Massage from the hands to the shoulders

Massage the stomach and buttocks in circular clockwise motions

Apply light pressure where the skin is thin or sensitive and firm pressure on thicker areas like the bottoms of the feet
