Squash Pancakes ~

Looking for something to try for lunch or dinner? Fall is a perfect time of year to eat root veggies. So let’s get creative and bring a breakfast staple into the day

Ayurveda Wellness Healing, LLC loves Squash Pancakes as they are easy to make help us to stay balanced in the dryness of Fall and Winter.

Squash Pancake
Prep: 20 min
Cooking time: 5 min
Cooking Tip: Cook the pancake on a cast iron pan – it won’t stick.

Ingredients:
1 c rice flour
1/4 c cream of rice
1 medium piece of squash
3 tbsp olive oil
1/4 c of grated coconut
1/2 tsp salt
3/4 to 1 c of water
2 tbsp of chopped cilantro

Wash the squash and grate it.
In a large mixing bowl mix rice, cream of rice, grated squash, grated coconut, cilantro, salt and 1 tbsp oil. Mix all the ingredients very well. Add water to make a thick batter. Let it sit for 15-20 minutes. Heat a cast-iron skillet or non-stick frying pan. With your hands, take some batter and place it on the pan. With repeated strokes, using your fingers spread the batter into 3/4 cm thick round pancake. Cook for two minutes. Flip the pancake over and cook for another three minutes.

Serve warm…add some chutney on top or eat as is and add some warm arugula or spinach as a side. Enjoy!

She had collected rocks, stones and crystals as a child at every beach, river and wooded area she found herself near, always appreciating the magic in nature. In 2002, she began creating beaded jewelry with natural gemstones and thus began the official start of ZuZu’s Healing Arts, Inc. Currently she owns and operates ZuZu’s, is a Psychic, Medium, Channel, Writer, Level 3 Reiki practitioner, Level 3 Melchizedek practitioner and self-proclaimed “Crystal Goddess”. In Ayurveda, the secret of the grapefruit lies in its powerful flavors, sour and bitter. These cleansing tastes stimulate the flow of bile, diluting and flushing it out of the gallbladder and into the small intestine. Stagnant bile tends to collect and thicken in the gall bladder, where the liver stores the bile after producing it, forming problematic sludge and stones. The sludge inhibits the drainage of bile, congesting the liver. Sour and bitter flavors encourage the bile to move and flush toxins out of the liver to the relief of your newly cleansed liver cells.

*Grapefruits are contraindicated for high blood pressure or when using anti-depressants. If you take thyroid medication, please check with your doctor before adding grapefruit to your diet.

Grapefruit with Ginger, Honey and Cardamom

Ingredients
2 pinch Cardamon
2 pinch Ginger (dried)
1 c Grapefruit
1 tsp Honey

Preperation
1. Peel grapefruit
2. Slice in flat circles
3. Mix ginger and cardmom with honey into a spicy paste. Drizzle over the sliced grapefruit. Cardamom is optional.

Ayurveda is a natural system of health and wellbeing and the sister-science to yoga. It originated in India thousands of years ago.

As a Complementary and Alternative Medicine Ayurveda can support your health needs in various ways. Ayurveda uses diet, herbal remedies, lifestyle tools and body therapies to establish health in body and mind.

Like Chinese medicine, Ayurveda is based on the five elements of nature. They are earth, air, fire, water and ether. According to Ayurveda, these elements are present in our environment around us as well as within us.

Good health is a state of balance of these five elements. Maintaining balance is the key and that involves many things. In Ayurveda the five elements are organized into three fundamental principles called doshas. The three doshas are vata dosha, pitta dosha and kapha dosha. Each of us are composed of some combination of these three doshas.

Doshas govern the various processes of the body and mind. They create your uniqueness. With some knowledge of the doshas you can begin to track your state of health or your level of balance. Maintain a balance of the doshas to maintain health and prevent future illness from occurring.

Fall is Vata season through the lens of Ayurveda.

It is a time to eat warm grounding foods and to have all six tastes represented at each meal:

Sweet
Sour
Salty
Bitter
Pungent
Astringent

This means to focus on foods that are naturally in season at this time of year!

Sweet fall foods include pumpkin, squashes, root vegetables, whole grains (quinoa and amaranth are the most warming), pears, persimmons, apples, whole milk dairy and fresh dates or figs. Cook your squashes and your roots.

Salty fall foods are most important for the person who deals with a dry/cold vata imbalance. Water follows salt so salt in this context is meant to hydrate – specifically good salt: Celtic sea salt, Himalayan pink salt, Fleur de sel, etc. Salts that are not bleached or processed but are whole – and balanced by minerals that naturally occur alongside sodium in the earth. Salt is particularly warm and unctuous (lubricating) when taken in moderate amounts.

Sour fall foods include lemons, whole milk yogurt, apple cider vinegar, and naturally fermented foods like raw sauerkraut.
