Asparagus Risotto ~

Asparagus Risotto ~

Love asparagus?  Here is one of Ayurveda Wellness Healing, LLC favorite.  Let us know what you think…

Traditonal risotto is made using arborio rice, which is white and glutinous and produces a very creamy rice dish. The trick to making a creamy and tasty brown rice risotto is to use short grain rice and lots of veggie stock.

3/4 cup short grain brown rice
2 cups vegetable or mushroom stock
1 Tbsp each butter (or ghee) and olive oil
4 cloves garlic, minced
1/2 red onion, chopped
1/2 tsp red pepper flakes
1 tsp dried basil
1 bunch asparagus, trimmed and chopped
black pepper
grated parmesan or reggiano cheese

In a medium, heavy pot, heat the butter (or ghee) and olive oil.  Add onions, garlic and red pepper flakes, sauteeing until soft. Stir in rice, basil and half the stock. Let simmer covered on medium for 20 minutes, then add remaining stock plus asparagus. Stir well, cover, and let cook until all the liquid is absorbed and rice is creamy (not firm or dry), about another half hour. If needed, cook in another 1/4 cup or 1/2 cup of stock to reach the right consistency. Stir in parmesan to taste and grind in some black pepper. Serves 2.

NOTE: Ayurvedically, cheese is not recommended as it is difficult to digest, but it also purports that black pepper helps make it more digestible.

FOR INDIVIDUAL DOSHAS
Great for all doshas. Pittas, omit or minimize garlic, dried basil, and red pepper flakes; Kaphas, omit or reduce butter and oil to 1 tsp each.

Squash Pancakes ~

Squash Pancakes ~

Looking for something to try for lunch or dinner? Fall is a perfect time of year to eat root veggies. So let’s get creative and bring a breakfast staple into the day

Ayurveda Wellness Healing, LLC loves Squash Pancakes as they are easy to make help us to stay balanced in the dryness of Fall and Winter.

Squash Pancake
Prep: 20 min
Cooking time: 5 min
Cooking Tip: Cook the pancake on a cast iron pan – it won’t stick.

Ingredients:
1 c rice flour
1/4 c cream of rice
1 medium piece of squash
3 tbsp olive oil
1/4 c of grated coconut
1/2 tsp salt
3/4 to 1 c of water
2 tbsp of chopped cilantro

Wash the squash and grate it.
In a large mixing bowl mix rice, cream of rice, grated squash, grated coconut, cilantro, salt and 1 tbsp oil. Mix all the ingredients very well. Add water to make a thick batter. Let it sit for 15-20 minutes. Heat a cast-iron skillet or non-stick frying pan. With your hands, take some batter and place it on the pan. With repeated strokes, using your fingers spread the batter into 3/4 cm thick round pancake. Cook for two minutes. Flip the pancake over and cook for another three minutes.

Serve warm…add some chutney on top or eat as is and add some warm arugula or spinach as a side. Enjoy!

Ayurveda is a natural system of health and wellbeing and the sister-science to yoga. It originated in India thousands of years ago.

Fall is Vata season through the lens of Ayurveda.

It is a time to eat warm grounding foods and to have all six tastes represented at each meal:

Sweet
Sour
Salty
Bitter
Pungent
Astringent

This means to focus on foods that are naturally in season at this time of year!

Sweet fall foods include pumpkin, squashes, root vegetables, whole grains (quinoa and amaranth are the most warming), pears, persimmons, apples, whole milk dairy and fresh dates or figs. Cook your squashes and your roots.

Salty fall foods are most important for the person who deals with a dry/cold vata imbalance. Water follows salt so salt in this context is meant to hydrate – specifically good salt: Celtic sea salt, Himalayan pink salt, Fleur de sel, etc. Salts that are not bleached or processed but are whole – and balanced by minerals that naturally occur alongside sodium in the earth. Salt is particularly warm and unctuous (lubricating) when taken in moderate amounts.

Sour fall foods include lemons, whole milk yogurt, apple cider vinegar, and naturally fermented foods like raw sauerkraut.

Ayurveda Wellness Healing, LLC loves cardamom, ginger and fennel tea which also helps improve digestion and circulation.
2 pinches of cardamom
2 pinches of fennel seeds
1/4 inch fresh ginger


Mash ginger in a mortar and pestle. Grind cardamom and fennel using a mortar and pestle. Place in cup. Pour boiling water over ingredients and steep, covered, for three minutes. Strain and serve.

Cheese and Food Combining…

Our digestive system was not designed to handle non-stop large, heavy, complex meals. The western eating habits place continual stress on the digestive system with inadequate “down-time” for the system to recuperate. When we over eat, eat too heavy or snack in-between meals we overwork the system causeing log-jams downstream resulting in undigested food that putrefies and ferments, leading to gas, bloating and potential accumulation of “ama” (toxins) from food and unprocessed emotions.

Though the lens of Ayurveda – food combining plays a big part in our digestion.

Cheese, which is cold, heavy and mucus forming, is best eaten alone or with vegetables. Many of the western serving methods (i.e., cheese and crackers; cheese and apples; macaroni and cheese, cheese with sandwiches, cheese pizza, etc.) are very difficult to digest.

Summer is around the corner and with it the heat…

The heat of the summer can provoke anger and irritability, especially when one is dehydrated. The mere smell of a rose cools ones anger and criticism.

Staying with Rose Water this week and the many benefits it plays in cooling Pitta here is a recipe for Rosewater Lemonade, one of Ayurveda Wellness Healing, LLC go to summer drinks…

Rosewater Lemonade:

1/8 whole lemon
2 pinch Rose Water
2 c water
1 tsp Raw Sugar

Mix all ingredients together. Served cool as a lemonade or frozen as a sorbet. Enjoy!
