Asparagus Risotto ~

Asparagus Risotto ~

Love asparagus?  Here is one of Ayurveda Wellness Healing, LLC favorite.  Let us know what you think…

Traditonal risotto is made using arborio rice, which is white and glutinous and produces a very creamy rice dish. The trick to making a creamy and tasty brown rice risotto is to use short grain rice and lots of veggie stock.

3/4 cup short grain brown rice
2 cups vegetable or mushroom stock
1 Tbsp each butter (or ghee) and olive oil
4 cloves garlic, minced
1/2 red onion, chopped
1/2 tsp red pepper flakes
1 tsp dried basil
1 bunch asparagus, trimmed and chopped
black pepper
grated parmesan or reggiano cheese

In a medium, heavy pot, heat the butter (or ghee) and olive oil.  Add onions, garlic and red pepper flakes, sauteeing until soft. Stir in rice, basil and half the stock. Let simmer covered on medium for 20 minutes, then add remaining stock plus asparagus. Stir well, cover, and let cook until all the liquid is absorbed and rice is creamy (not firm or dry), about another half hour. If needed, cook in another 1/4 cup or 1/2 cup of stock to reach the right consistency. Stir in parmesan to taste and grind in some black pepper. Serves 2.

NOTE: Ayurvedically, cheese is not recommended as it is difficult to digest, but it also purports that black pepper helps make it more digestible.

Great for all doshas. Pittas, omit or minimize garlic, dried basil, and red pepper flakes; Kaphas, omit or reduce butter and oil to 1 tsp each.

Help! Thanksgiving is fast approaching and I can’t get organized….

So how can we overcome this to make our days productive?

Between the hours of 2pm and 6pm, #VATA energy is at its highest. Vata stimulates elimination, movement, speech, enthusiasm, creativity, breathing and nervous system functioning. Researchers have found that mind-body coordination (dexterity) is at its greatest about 4pm and that muscle strength is at its weakest at this time. This is why in the afternoon it is a good time to do your mental work.

The afternoon is a great time to get through a task list bullet point by bullet point.

So be easy on yourself this holiday season and go slow as now you know you will pick up speed and be your most productive this afternoon

Ayurveda is a natural system of health and wellbeing and the sister-science to yoga. It originated in India thousands of years ago.

Doshas govern the various processes of the body and mind. They create your uniqueness. With some knowledge of the doshas you can begin to track your state of health or your level of balance. Maintain a balance of the doshas to maintain health and prevent future illness from occurring.

Summer is around the corner and with it the heat…

The heat of the summer can provoke anger and irritability, especially when one is dehydrated. The mere smell of a rose cools ones anger and criticism.

Staying with Rose Water this week and the many benefits it plays in cooling Pitta here is a recipe for Rosewater Lemonade, one of Ayurveda Wellness Healing, LLC go to summer drinks…

Rosewater Lemonade:

1/8 whole lemon
2 pinch Rose Water
2 c water
1 tsp Raw Sugar

Mix all ingredients together. Served cool as a lemonade or frozen as a sorbet. Enjoy!

What is Kitchari?

What is Kitchari?

So, what’s kitchari and what does it have to do with Ayurveda and, more importantly, you?

Kitchari is a traditional Ayurvedic dish that’s known to assist in detoxing the body and balancing all three doshas: vata, pitta, and kapha. Kitchari provides awesome nutrients while cleansing the toxins out of the body. It’s a great way to cleanse the body and soul in a gentle way.

Kitchari is made with mung beans, Basmati rice, seasonal vegetables, ghee and spices. The mung beans are known for their ability to remove toxins, specifically pesticides and insecticides, from the body. Mung beans are also a great source of protein and provide a source of good carbohydrates and fiber. It’s also a great dish for those having digestive problems and recovering from illness. There’s many versions of Kitchari out there from simple to more elaborate.

Digestion = Agni

Digestion = Agni

Through the lens of Ayurveda we are what we “digest” not what we eat.

If we don’t digest our food we start to form “Ama”. Ama is a Sanskrit word, which literally means undigested or uncooked. The first stage of disease is also sometimes called Ama “toxins”.

Ayurveda also explains another entity called “Agni”. This word literally means fire. But in this context it means digestive fire. As long as the digestive fire is strong, Ama cannot be formed in the body. Agni (digestive fire) helps to melt down and flush out Ama (toxins) from the body.

Weak Agni (digestive fire) becomes weak by eating out of one’s constitution (Vata, Pitta or Kapha), eating the same foods, overeating, drinking too much water with meals, staying up late, resisting the urge to eat and eating at irregular times.

Presence of Ama (toxins)
Eczema
Psoriasis
Cysts
Swellings
Painful or swollen joints
Hypercholesterolemia
Blocked arteries

Symptoms of Ama in the body:
Heaviness
Lethargy
Irregular appetite or reduced appetite
Skin is dull and lusterless with blemishes, acne
Bloated stomach, gases, flatulence
Metallic taste in the mouth
White coating on the tongue
Foul smelling breath and sweat
Constipation, foul smelling stools which may be sticky, heavy and sink.
Lack of mental clarity and energy.
A sense of heaviness in the abdomen, legs or body as a whole
Weary and unenthusiastic feeling
Blocked feeling anywhere in the body, including constipation, sinus congestion and difficulty in breathing
Waking feeling tired even after a good nights sleep
